You can’t take any shortcuts if you want it to turn out right. Just trust me on this. For example, I freeze the ice cream for 2 hours after scooping it. This step is absolutely essential because you want the ice cream to harden completely. Yes, I know ice cream is already frozen but once you shake it, the ice crystals soften. Strawberry Ice Cream Mochi Tutorial


Ingredients - ice cream - 1/2 cup milk - 1/3 cup sugar - 1/2 tsp vanilla extract - 2 tsp coconut oil - food coloring (optional) - 1/2 cup Mochiko sweet rice flour (aka glutinous rice flour) - potato starch or cornstarch Follow IG for DAILY recipes — 🤍jasmineandtea Music: 🤍ikson Instructions 1. Scoop 4 ice cream balls into cupcake liners with an ice cream scooper and use a butter knife to get a flat surface. Place the muffin tins in the freezer for at least 2 hours to harden. 2. When the ice cream is ready, prepare the mochi dough. Gently heat the milk and sugar together until the sugar is dissolved. Turn off the heat and add the vanilla extract, coconut oil and food coloring. 3. With the heat still off, gradually mix in the Mochiko flour until smooth. Turn the heat back on to medium and continue to stir for about 3-5 minutes. It’s ready when the dough is smooth, thick and elastic. 4. Sprinkle starch on parchment paper and place the dough on top. Flatten the dough into a square and make sure to use enough starch to prevent stickiness. Cover with plastic wrap and place this in the fridge to cool for 20 minutes. 5. Now we’re ready to shape the mochi balls! Cut the dough into 4 pieces and add the ice cream in the middle, making sure to only take out one ice cream ball at a time. 6. Pinch the edges together to close the mochi ball and let it set in the freezer for 20 minutes. You can also store these in the freezer for a longer period of time - just let it come to room temperature for 10 minutes or so to soften. Me and 🤍laja are addicted to mochi and we made them with our own twist! I found so many over complicate recipes to make mochi while it could be such an easy process and absolutely delicious! MOCHI DOUGH: •180 x ml water •120 x g glutinous rice flour / sweet rice •60 x g white sugar •corn starch for dusting •OPTIONAL: 1-1/2 x teasp cocoa powder, Macha powder or any powder you prefer . STEP BY STEP 🥣 -mix water,flour,sugar and the flavour powder you prefer in a pan and cook on a medium heat until it starts to thicken then lower the heat and keep cooking until a doughy consistency. -transfer the dough on a cutting board or plate making sure it’s well covered with corn starch and let it cool. -once cool you can divide it in to 6-8 balls and fill them up . -use more corn starch on your finger so that the dough won’t stick everywhere. MOCHI FILLING: •160 x g white chocolate (any vegan or vegetarian works) •1 x teasp Macha powder •3 x tbsp coconut milk (only the thicker top cream from the tin) •1 x tbsp corn starch STEP BY STEP 🥣 -mix all ingredients in a bowl and double boil until everything is melted and blended together. -let it cool completely before use in the mochi dough. -alternatively you can use a peanut butter mix ,white bean paste , red bean paste,ice cream, strawberry or cookie dough. Cookie Dough Mochi Recipe #shorts


I was so surprised by how this turned out! I honestly feel like you can wrap absolutely anything in mochi and it’ll taste so much better!! Ingredients: 1/2 cup milk (I used whole milk, but sub any you’d like) 1/3 cup white sugar 1/2 tsp vanilla extract 2 tsp coconut oil (You can substitute any neutral flavored oil, but I prefer the coconut oil taste) 1/2 cup glutinous rice flour (also called sweet rice flour) *Making the Mochi* 1. Start by gently heating the milk and sugar until the sugar has dissolved. Then add the vanilla extract for added flavor and the coconut oil to keep in moisture. Slowly add in the sweet rice flour while mixing to incorporate. 2. When the mixture is smooth and clump-free, increase the heat to medium. Heat the mixture for 3 to 5 minutes in a non-stick pan. While mixing the entire time, making sure not to overcook the dough. Lower the heat if it looks like it might burn or the edges are getting hard. Use a spatula to flatten the dough in the pan and continue to flip the bottom dough to the top while mixing. The dough is ready when it looks bouncy. Taste it! It should be chewy. *Shaping the Mochi* 4. Generously spread your starch on a cutting board and your hands so that you’re able to stretch and shape the mochi dough. If the dough seems too sticky, you’re not using enough starch! 5. Transfer the mochi dough from your pan to the cutting board. It will be hot. If it’s too hot for you to handle, cover it with plastic wrap so it doesn’t dry out and wait til its cooled off. I find that if you flatten the dough it will cool off faster while shaping right away. 6. Flatten the dough with your hands, flip it over and stretch the ends out until you’ve reached your desired thickness. Cut it into 4 equal pieces. Add a cookie dough ball to the middle of your mochi dough and bring the ends together to close it up. Remove the excess dough at the ends so you have a more even mochi ball. Now roll it between your hands or the board to even it out and make it more circular. Dust with starch to remove stickiness and brush off any excess starch from the mochi ball. In a large bowl, sift together 1 cup minus 1 tablespoon of all-purpose flour, 1 tablespoon cornstarch, 3/4 cup glutinous rice flour, 1 tsp baking powder, and 1/2 cup granulated sugar. Then set it aside. 2. In a separate bowl, press 3.5 oz of silken tofu through a fine-mesh sieve. Make sure to scrape the bottom of the mesh to ensure all the tofu is used up. 3. Now add in 1 large egg and 2 tbsp of water. Using a whisk, mix just to combine. 4. Now add the egg and tofu mixture to the flour mixture and combine using a spatula. 5. Once the dough begins to take shape, you can begin working it together using your clean hands. 6. Now form the dough into little balls about 7 grams each. You should get a total of about 64 tiny balls. You will want to use a kitchen scale for this step. 7. Now cut 8 (5x5 inch) square pieces of parchment paper and begin forming donut shapes on top of each paper using 8 dough balls for each donut. 8. Fill a heavy-bottomed pot with about 2 inches of corn or vegetable oil and heat it to 325-350 degrees Fahrenheit. It’s best to use an instant-read thermometer to get the perfect oil temperature for donuts. Make sure the oil isn’t too hot or it will burn the donuts and leave them raw in the center. Having too low of heat will overcook them and make them dry. 9. Place the square piece of parchment paper and donut onto a large slotted spoon and gently slip it into the hot oil. Fry about 2 donuts into the pot at a time. You don’t want to overcrowd the pot. 10. After about a minute or so, use tongs to flip the mochi donut over. And with those same tongs, carefully peel off the parchment paper and discard. Once the donuts have browned on one side, flip them over and fry for another minute. 11. Using a slotted spoon, carefully transfer the donuts to a plate lined with paper towels to absorb the extra oil. 12. Strawberry glaze: Start by melting 4 oz of white baking chips in a microwave-safe bowl. Then add 1 drop of pink food coloring and 2 oz of fresh strawberries and blend them in using an emersion blender. You can make this in a regular blender too. Make sure your strawberries are not too cold or you can seize up your chocolate. If they are straight out of the fridge just heat them up in the microwave for about 10 seconds. Now dip the donuts into the glaze and transfer to a cooling rack to set. 13. Matcha glaze: add 1/4 cup of hot simmered heavy cream to 4 ounces of white chocolate chips. Mix until smooth, then whisk in 1 tsp of matcha powder. Mix again and dip a few donuts in the match glaze. 3. Chocolate Nutella glaze: sift 3/4 cup powdered sugar and 2 tbsp unsweetened cocoa powder into a bowl. Then whisk in 3 tbsp warm milk, and 3 tbsp Nutella. Dip the donuts and let them set. I decorated my mochi donuts with some drizzles of melted white chocolate and a little bit of crushed special k cereal.
